After drying the sunflowers for a few days, I finally got the chance to try eating the seeds.

I normally eat almonds and walnuts raw (but store bought) in my breakfast, so I figured I would try eating our home grown organic sunflower seeds raw too. Well, it didn’t work so well. The seeds were small and stuck to the shell so that you couldn’t easily separate it without destroying the whole thing.

I have two theories as to why this would be. First, maybe the type of sunflower isn’t the same as the kind that produces the seeds most people eat. Second, maybe the seeds separate from the shell easier if they are roasted.

We did grow two varieties of sunflowers. The kind we dried is the one that has a larger area in the middle for the seeds and a larger number of seeds. Maybe this kind produces smaller seeds?

I’m going to try drying the other variety and compare. If that isn’t noticeably different, I might try roasting the seeds and see if that makes any difference.
